• DIFFICULTY OF PREPARATION: 4.2 OUT OF 10 — The little preparation involved making these drinks is neither difficult nor time-consuming. These luscious tropical drinks are hand-shaken, strained into tall iced glassed and often finished with seltzer or club soda. For most, that’s about it. A few of these drinks are prepared in a blender and served tall, cold and slushy.

[Scale 1– 10: A drink with a value of 5.0 or lower means it’s quickly and easily prepared, while one with a value closer to 10 indicates that several days and an advanced engineering degree are required.]


• UP-SELLING POTENTIAL: 7.7 OUT OF 10 — For the most part these drinks are made using light or gold rum with an liqueur or two tossed into the mix…literally. In each instance, there are premium brands that can be used instead of less expensive spirits. Committing premium rums to Tiki drinks isn’t sacrilege, it’s creative genius. The better the ingredients you use, the better the results. Secondly, boosting sales of premium brands makes good business sense as they command higher prices and yield bigger margins.

• ALCOHOL POTENCY — Many of the recipes for these classic drinks call for three or more ounces of alcohol, making them exceptionally potent drinks to serve the public. We’ve toned down the portioning in our recipes to be more palatable and socially responsible all the while still delivering the goods. These drinks needn’t be highly combustible to be delicious.

• PORTIONING CONSIDERATIONS — Tiki drinks are typically prepared with no more than 2 ounces of alcohol—spirits and liqueurs—and up to 6 ounces of various alcohol-free ingredients. Proportions typically range between 1 part alcohol to 2-4 parts mix. When devising one of these specialties be conservative with the amount of alcohol you use. Making the drink more potent at that point then involves no more than a minor flick of the wrist. However, if you use too much alcohol relative to the size of the glass the drink is not as easily fixed.


• SEASONAL ORIENTATION AND TRADE PERIOD — Tropical drinks like Mai Tais, Zombies and Hurricanes have built a well-deserved reputation for fun in the sun. The warmer the weather, the better they like it. So unless you’re throwing a summer beach party in the middle of December, these drinks are more promotable during the summer months.

As for trade periods, Tiki drinks are in their element whenever the sun is over the yardarm, as they say, which loosely translates to anytime between brunch and the cocktail hour. The shank of the day is when they are at their delightful best.


• GLASSWARE OPTIONS — The choice of glassware is an important marketing consideration. Conventional wisdom contends that the better a drink looks and the better people look drinking it, the better the drink will sell.

Serving a Mai Tai, Zombie or Hurricane in a plain, nondescript glass is like displaying magnificent paintings in cardboard frames. These tall attractive drinks are invariably served with ice and deserve to be presented in tall, equally attractive glasses. The glass you choose should be have minimum capacity of 14-ounces, although those with 16-ounce capacities offer more latitude when it comes to garnishing and adding a few creative twists.

• RUM, GLORIOUS RUM — Their engaging taste and aromas make rums ideally cast as the heart and soul of the Tiki drinks. Whereas a spirit like vodka looks to assimilate and go unnoticed in a cocktail, rum always makes a lasting impression.

They’re made in exotic places, graced with brilliant hues, captivating bouquets and rich engaging flavors. Part of its immense popularity also lies in its diversity. Rums are produced in a broad range of styles—from clear, dry and light-bodied to dark, full-bodied and full-flavored.

Heavy rums are typically distilled in pot, or alembic stills. Heavy is an unfortunate label; it gives the impression that they are dense and chewy. In fact, heavy rums are aromatic and loaded with flavoring agents (congeners). Light rums are usually distilled in column or continuous stills. Their light bodies and crisp, clean palates make them highly mixable.


• SPIRIT OPTIONS — Light rums are traditionally used in tall tropical drinks presumably because it leaves the color of the drink unaffected. On the other hand, its off-white appearance isn’t necessarily the drink’s strongest attribute. Using gold or aged rum instead is an inspired choice.
